Cut green onions for topping.
Spread the pork belly in a frying pan with sesame oil, season with salt and pepper, and stir fry until cooked through.
Add Wood Ear mushrooms and bean sprouts, and turn off heat when lightly browned and wilted.
Boil water in a pot and cook the noodles, following the package instructions. Then rinse under cold water and drain well.
Put the noodles into the frying pan and stir fry, loosening the noodles as you fry them.
After the noodles are lightly browned, add the soup and stir fry while loosening the noodles.
Serve in a bowl and top with red ginger and chopped green onions.
