Removing the seeds, slice 1/4 bitter gourd into half vertically and cut to thin slices.
Boil the sliced gourds in salted water. Set aside.
Mix bitter gourds with 1/4 kalua pork (or bbq pulled pork).
Boil plenty of water in a pot and follow the package instructions to cook the noodles.
Once the noodles are cooked, rinse in cold water and drain well.
Place the noodles in a bowl. Top the noodles with mixed gourd and pork from Step 2 and garnish with red ginger. Pour in the sesame hiyashi chuka sauce to finish. Enjoy!
