Ingredients

Udon

  • 2 servings Jumbo Udon Noodles Only

Soup

  • 1 cup Water
  • 1 cup Milk
  • 1/2 cup Heavy Cream (or Half and Half)
  • 1 tsp Chicken Bouillon Powder
  • 1 Medium-Sized Potato thinly sliced
  • 1/2 Onion
  • 1 tbsp Butter
  • 1/2 tbsp Curry Powder
  • 1/2 tsp Cumin Powder
  • Salt and Pepper by preference

1/2 cup Mashed Potato

  • 1 Medium-Sized Potato thinly sliced
  • 1/4 cup Milk (or Heavy Cream)
  • 1/2 tbsp Butter
  • Salt and Pepper by preference

2 Poached Eggs

  • 2 Eggs
  • 1/2 tbsp Salt
  • 1/2 tbsp White Vinegar
  • Water to boil

Garnish

  • Grated Parmesan Cheese by preference
  • Dill Leaves by preference

Instructions

Mashed Potato

  • Peel the skin off the potato and cut to thin slices.
  •  Rinse off the starch and boil the sliced potatoes in plenty of water.
  • Once the potatoes are boiled, drain and mash.
  • Add in ½ tbsp butter, salt, pepper ¼ cup, heavy cream (or milk) and stir until the mashed potato is smooth. 

Soup

  • Thinly slice the potatoes and onion.
  • Heat butter in a pot and sauté the vegetables.
  • Add in the curry powder and continue to sauté. Pour in water and boil for 7 minutes, until the potatoes are cooked. 
  • Turn off the heat and pour in milk. Stir well and add in the heavy cream.
  • Using a blender, blend the mixture to smoothen.
  • Transfer the soup back into the pot and simmer in low heat. DO NOT let it boil, or the ingredients may separate.

Poached Eggs

  • Boil water in a pot and add in 1 tbsp of salt and white vinegar.
  •  Using a chopstick or a spoon handle, quickly stir the water in one direction until it's all smoothly spinning around.  A whirlpool should form.
  • Crack open and drop the egg into the center of the whirlpool. 
  • After letting it cook for 1 min in the whirlpool, use a ladle and carefully remove the egg from the pot. Place the egg in an ice bath to chill. 
  • Repeat once more for the other egg.

Udon

  • Follow the package instructions to cook the udon noodles. 
  • Place the udon in a bowl and pour in soup.
  • Shape the mashed potato into a round-shaped ball, placing it over the noodles.
  • Carefully place the poached eggs to the bowl.
  • To finish, sprinkle grated parmesan cheese and dill leaves. Enjoy!
